Monosodium Glutamate (MSG)
Monosodium glutamate, a flavour enhancer. Safe for most people, but it adds sodium and signals a flavour-engineered product.
Monosodium glutamate (MSG) is the sodium salt of glutamic acid, the same compound that gives tomatoes, cheese and mushrooms their savoury taste.
What the research says
Controlled studies have not supported the idea that normal amounts cause reactions in most people. It does add sodium, and it is often used to make low-quality ingredients taste better.
CleanPlate verdict
Worth watching rather than fearing. Check the sodium figure.
