Calcium Propionate
The most common mould inhibitor in packaged bread. Generally regarded as safe.
Calcium propionate keeps bread and baked goods from going mouldy.

Regulators consider it safe. A few small studies have suggested irritability in some sensitive children, but the evidence is limited.
